Wow! Thanks for catching this. Can't believe it has never been tried before. Certainly a day-one V3.0 bug.
To work around this - instead of using 'Scientific Name' field, use 'Genus' and 'Species' in that order and sort on both. See screenshot below. That will work.
Also, as for Family and Order Description fields, those are optionally populated by the taxonomy author. In this case, they have not been populated. You have the ability to set values for all of those using the Tax View feature; right-click on each Order or Family node in the tree and Add Description. Short of that however, just choose the Latin 'Order' and 'Family' fields to be output; not the 'Order Desc' and 'Family Desc' fields. See second screen shot below. Those are always populated with the Latin classification.
I will fix this bug in v3.7.
