When I enter new sightings, they appear twice in my list of sightings.

You don't quite say where this problem occurs, but the most likely function is in View/Edit Sightings.
The most likely cause is having two (or more) taxonomy lists selected.
If View/Edit is what you are doing, see if more than one list is checked. It should tell you how many are checked at the top of the box.
If you were doing something else, tell us what you were doing.
